For an easy keto dinner try these keto philly cheesesteak quesadillas using ground beef. It’s a keto twist on a cheesesteak sandwich. Full of savory ground beef, peppers and gooey cheese grilled in a low carb tortilla. This is a fast and easy low carb dinner, snack or lunch! Each has just 2.1g net carbs!

We have quesadillas quite often in our house because it’s one of my family’s favorite foods and they are quite easy to make. Today I wanted to put a twist to our usual Mexican flavors and made a Philly cheesesteak filling using ground beef.

I also used some low carb tortillas I bought to make these keto Philly cheesesteak quesadillas. So this quick and easy dinner was also low carb. You can eat the filling as is, or make this crispy quesadilla or even eat them as tacos! They would be perfect for game day.

Recipe ingredients I used.

The filling for these low carb quesadillas were made of ground beef, white onion, bell pepper, steak seasoning and olive oil. Because I used steak seasoning I didn’t think the dish needed any salt, black pepper or garlic as it has all of that in it.

I used a combination of green pepper and sweet bell pepper because I like the flavor combination. Other low carb veggies you can use are mushrooms or jalapenos.

For the rest of the dish I used low carb flour tortillas and provolone cheese. I love provolone with cheesesteaks but you can use your cheese of choice.

The low carb tortillas I used.

Awhile ago a bought a bunch of these low carb mini taco tortillas from amazon and froze them. They are really good and there are zero carbs per tortilla. However they are small and you have to buy them online.

Aldi has a low carb tortilla and they are bigger but they also have a few carbs. La Banderita have 0g net carbs per tortilla and the Aldi brand has 4g net carbs per tortilla.

They are both good and a great food to have on hand.

How to make keto Philly cheesesteak quesadillas.

Step 1: Chop peppers and slice onions and set aside. Get out a large skillet and heat to medium high heat for a minute or so. Add the oil and when it starts to sizzle turn the heat down to medium.

Step 2: Add the onions and peppers and saute for a few minutes until the onions start becoming translucent. Then add the ground beef and break up with a wooden spoon. Season beef with the steak seasoning and mix everything well.

Step 3: Continue to cook the beef mixture until all the meat has browned as well as the vegetables then take it off the heat.

Step 4: Get out the tortillas. Lay some of the filling on one tortilla and a slice of provolone cheese on another tortilla. Place them together and set aside.

Below you can see I used the smaller La Banderita street taco tortillas. The size of the cheese just fits perfectly and they have less carbs.

Step 5: Heat up a medium size skillet to medium heat. Spray with non stick cooking spray and then lay the quesadilla down. Cook for a few minutes to let the cheese melt and get a crispy tortilla. Flip and do the other side.

Step 6: Let rest a few minutes and cut with a sharp knife or pizza cutter into triangles and serve. I served with mashed avocado, sour cream and salsa. (Please scroll down to view the printable recipe card.)

Store leftovers in an airtight container.

As I mentioned above, you can eat the filling as is, in a quesadilla like below or even eat it as a taco to on top of a salad. It’s very versatile!

Above you can see I used 1 of the bigger Aldi low carb tortilla on the left and 2 of the smaller La Banderita tortillas on the right. They were both very good just the size is different and the amount of carbs.

I really love this recipe for a change of pace from our usual Mexican flavored ones. It’s also like a different take on a Philly cheesesteak sub or sandwich.

Keto Philly Cheesesteak Quesadillas Recipe

These easy keto Philly cheesesteak quesadillas are made with ground beef and low carb tortillas for a delicious keto dinner or lunch. Full of beef, peppers and cheese these will be your go to dinner for busy weekenights.

Ingredients

  • 1 pound lean ground beef
  • ½ cup onion sliced thinly
  • 1 cup sweet bell peppers, thinly sliced
  • 2 teaspoons steak seasoning
  • 1 tablespoon olive oil
  • 8 slices of provolone cheese
  • 16 La Banderita street taco No Carb Tortillas

Instructions

  1. Slice the onions and peppers and set aside. Heat up a large skillet to medium high heat. Then add the oil and when it starts to sizzle turn down the heat to medium heat.
  2. Add in the onions and peppers and saute for a few minutes to soften the vegetables. Then add the ground beef and break it up with a wooden spoon or spatula. Sprinkle the steak season over the beef and mix well would browning the meat. Once the meat and vegetables are cooked through and nicely browned take off the heat.
  3. Line up the mini tortillas with a slice of cheese on 8 of them. Place a couple tablespoons of the meat mixture on the other 8 tortillas. Place together to make 8 mini quesadillas.
  4. Heat up a medium size skillet to medium heat and spray with nonstick cooking spray. Place a prepared quesadillas in the pan and spray the top with nonstick cooking spray. Cook for a few minutes to melt the cheese and bottom is golden brown. Flip and brown the other side then transfer to a plate. Continue until you've made all 8 quesadillas.
  5. Once down, cut with a pizza cutter into triangles and serve. You can also serve them with salsa, mashed avocado, sour cream, or just eat them as is.
