These Hawaiian roll breakfast sliders are not just easy to make, they’re pure breakfast bliss served on a bun!

Our family loves…I mean LOVES lazy weekend breakfasts. I say lazy because ‘easy-to-make’ is always on the menu and ‘comfort food’ is too.

These ham, fluffy scrambled eggs and cheese breakfast sliders tick off both boxes and they are always the crowd favorite.

As if the basic ingredients weren’t enough, we like to add the maple butter to the top buns which includes crushed French fried onions, along with sesame and poppy seeds. The sweet, buttery glazes melts over each slider, making every single bite pure deliciousness.

Ingredients

This recipe requires simple ingredients that you can find in your local grocery store.

  • Eggs – use large eggs for this recipe.
  • Water – if you prefer a more creamy scrambled egg mixture, replace the water with the milk.
  • Salt & black pepper
  • Butter – we used unsalted butter
  • Sweet Hawaiian rolls
  • American cheese slices– if you prefer, you can use any type of sharp cheddar cheese, medium or mild cheddar & Colby Jack cheese are all great options.
  • Deli sliced ham – order it thinly sliced.

Topping:

  • Unsalted butter
  • Maple syrup – for beset flavor, we always choose pure maple syrup. You can also use store-bought maple syrup if you prefer.
  • French fried onions
  • Sesame seeds
  • Poppy seeds

Variations

Change up the protein – replace the ham with sausage patties or crispy bacon. You can also fry up some breakfast sausage and use that instead of ham. Canadian bacon (peameal bacon) is also delicious!!!

Make them vegetarian – leave out the ham altogether and enjoy egg and cheese sliders!

Can I use a different type of roll for the slider bun?

Of course! We love the sweetness of the original Hawaiian roll. But regular dinner rolls or savory butter rolls would work too! It’s completely up to you!

Can I leave the eggs out?

Of course! One of the best things about these little breakfast sandwiches is that you can customize them. Ham and cheese is a great combination without eggs. And with the maple butter topping, they still have a breakfast flavor profile.

Can I assemble these sliders ahead of time?

Sure! These may be made the day before, wrapped well in plastic wrap or tightly covered with aluminum foil, stored in the refrigerator, and baked the next day. Perfect if you have a crowd for breakfast and you’re making more than one dozen.

STEP 1 – Preheat the oven to 350℉. Spray a 9”x13” casserole dish with cooking spray. Set aside.

STEP 2 – Add eggs, salt, pepper, and water to a large mixing bowl and whisk to combine.

Why is water added to the egg mixture? As the eggs cook, the water becomes steam and evaporates, creating fluffier scrambled eggs. It also makes moist scrambled eggs.

STEP 3 – Melt butter in a large skillet over medium heat. Pour the egg mixture into the frying pan and scramble the eggs until they are cooked. Set aside.

How do I know if scrambled eggs are cooked? Although the eggs in these sliders will have a bit more baking time once they’ve been layered in the sandwich and transferred to the oven, the eggs are cooked when there is no visible liquid in the skillet when cooking them on the stovetop.

STEP 4 – Without separating the rolls, cut them in half horizontally. Place the bottom half in the prepared casserole dish. Set the top halves of the buns aside.

Tip – For best results, you will need a sharp serrated knife to cut the roll in half.

STEP 5 – Place 6 cheese slices in an even layer on top of the buns.

STEP 6 – Add a layer of ham slices on top of the cheese. Top the ham layer with the scrambled eggs. Then top with remaining cheese.

STEP 7 – Place the top half of the buns over the cheese and press down slightly.

STEP 8 – Make the maple butter glaze: In a microwave-safe medium bowl, melt the butter. Add the maple syrup, crushed French fried onions, sesame, and poppy seeds. Mix well, and brush over the top and sides of the rolls.

STEP 9 – Loosely cover baking dish with foil and bake for 15-20 minutes.

Uncover and bake for another 10 minutes or until the cheese is melted and the rolls are golden brown. Cut between the rolls to serve and enjoy these mini sandwiches!

Storage & Freezing Instructions

Leftover Hawaiian sliders can be stored in an airtight container in the refrigerator for 3-4 days.

To reheat leftover breakfast sliders, microwave sandwiches individually for about 15-20 seconds.

Freezing the sliders is a great way to prep them for a convenient breakfast. Wrap them individually in plastic wrap and place them in a freezer bag. They will keep for 3 months.

To reheat a frozen breakfast slider, do not thaw. Place in the microwave and heat on high in 30-second intervals until heated through completely.

Ingredients

  • 10 large eggs

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 2 Tablespoons water

  • 2 Tablespoons unsalted butter

  • 1 package of Hawaiian rolls (12 rolls)

  • 10-12 slices deli American cheese

  • 9-12 slices deli ham, thinly sliced (about 1 1/2 pounds)

  • Topping

    • 2 Tablespoons unsalted butter

    • 2 Tablespoons maple syrup

    • 2 Tablespoons finely crushed French fried onions

    • 1 teaspoon sesame seeds

    • 1 teaspoon poppy seeds

Instructions
